Swirling like a galaxy, baby 


Japanese dipping sauce:
1 cup Shiitake Dashi
2 cups Konbu Dashi
2/3 cup tamari soy sauce
1 cup sake
1/4 cup mirin
1 teaspoon grated peeled gingerroot

In a medium saucepan, combine ingredients. Simmer, uncovered, for about 30 minutes. Remove from heat and set aside to cool to room temperature.
